As usual, I was skeptical I have read a couple of websites where “authorities” said this method does not work to infuse flavor into poultry. They claimed that the flavored liquids in the steamer do not get into the meat. Well, I had to see for myself. At different times on the same day, I made one chicken with an oil rub, but no liquid in the steamer and then another with an oil rub, and pre heated apple juice and crushed rosemary in the steamer. I don’t understand how the “authorities” could have been so wrong…
