Vegetarian Grilling

Grilling vegetables brings out their natural flavour, and many vegetables are suitable for grilling, especially Mediterranean types. Grilling is becoming popular in vegetable cookery, and vegetables can be grilled from above, under a conventional grill, or from below, on a barbecue. This is also a healthy way to cook: it is so quick that the nutritional content is retained, and as vegetables contain little fat all that is needed is a brush of extra virgin oil or flavoured oil.
